Autumn is here in all it's beautiful colors...

Autumn is here in all it's beautiful colors with cooler temperatures, shorter days, and enjoyable evenings strolls with sweatshirts, hats, and flashlights. Lentil bean soup will be on our table for dinner!  A hearty soup that can stand on it's own or you can pair with a simple salad.

It is such a simple dish starting with the soaking of Lentil beans. Yellow onions slowly cooked over the burner with orange bell peppers, fresh garlic, tomatoes, broccoli, and spinach.  Combined with lentils and cook slowly adding fresh nutmeg, pepper, and thin sliced basil.  Add one cube or 1 tablespoon Rapunzel Vegetable Broth and simmer.  

You may want to serve with artisan whole grain bread with garlic and robust olive oil for dipping or Ak-mak crackers with thin slices of a favorite hard cheese such as Mezzo Secco!  Tomorrow for lunch, you can enjoy the left overs or freeze for another Autumn day.  Seems to always taste better after sitting for a few hours to for all the flavors to seep in.
